What steps do you take to ensure that your gluten-free baked goods are free of cross-contamination and safe for those with Celiac Disease?
Pendragon’s Bouquet only bakes gluten-free cakes and galettes. Only gluten-free flours (e.g., almond flour, hazelnut, walnut, or Bob’s Red Mill One-to-One flour) are used on the work counters and stored separately in the kitchen. Our food processors, mixers, mixer attachments, and hand tools are carefully and thoroughly washed and drip-dried.
Since 2015, after my grandson was diagnosed with Celiac Disease, our family understands just how important it is that gluten-free foods be free of cross-contamination; particularly for those with Celiac disease.
Where can I purchase mushrooms, bouquets, galettes, cakes, flower crowns, wreaths, gift cards and edible flower blends in-person?
Pendragon’s Bouquet is a regular vendor at the Trumansburg Farmers Market, which runs from early May to late October. The market is open from 4 - 7 PM Wednesdays (located in Trumansburg Village Park on the corner of Route 227 and 96). Pendragon’s Bouquet also serves as a vendor at summer festivals and sells bouquets near the Cornell campus. Products purchased here, on-line, can be picked up directly at the Pendragon’s Bouquet farm in Trumansburg, NY. or by arrangement, at the Trumansburg Farmers Market.
What is a “torte” exactly?
A torte is a specific type of cake. A key difference is in the ingredients. A traditional cake is made with sugar, eggs, butter, and flour, using baking powder or baking soda for leavening. Our torte calls for less flour ( because we only offer gluten-free baked goods, the flour we do use is gluten-free), ground nuts, and sugar, with eggs as leavening.
What are the fundamentals of flower picking?
Pick flowers early, best before the heat of the day using clean, sharp snips. Use cold, clean water in clean buckets to hold for most flowers, but use warm water for Asclepias and sweet Annie. Cut flowers stems long to encourage lower branching.
Since we don’t use pesticides, some flowers like dahlias, must be picked daily to protect them from weevils and Japanese beetles. Pick when the flower has broken open, just as you would with sunflowers. The flowers will continue to open in cold storage.
How do you keep your flowers fresh?
We strip two thirds of the leaves from most stems so that their leaves don't spoil the water. With some stems, like Tithonia and most sunflowers, we remove all but the top leaf immediately. Keep the stems long to ensure better stem life. Slice the first inch of the bottom of woody stems in half for better water uptake. With plants carrying large flower clusters, such as amaranth, we strip all leaves from their stems to discourage wilting.
After cutting, the pails go into the shade till they are stored in the cooler. Each time we pull stems from these pails, we reset them by recutting their stems and updating their water. Small stemmed flowers, especially those in early spring, must be put in jars in buckets to keep the stems upright. Soggy flowers rot fast.

Whenever possible organize your cuttings by color especially with snapdragons and statice. This will help you determine which colors to put into the bouquets and reduce damage from repeated handling.

Pendragon’s Bouquet has been in business for 12 years. We have been baking gluten-free cakes weekly since 2015.
